Pok Pok's Famous Vietnamese Wing

1/4-1/2 cup Warm Water
1/2 cup Sugar
1/2 Fish Sauce (You can use soy sauce if you don’t like fish sauce)
Tapioca Starch
Chili Sauce


- Mince Garlic, sprinkle sat, and mince again. Soak minced garlic in a bowl of warm water. In another bowl mix sugar, and fish sauce (or soy sauce). Mix till sugar is dissolved. Then pour liquid from garlic into sugar mix. Pour half of the mixture into a bag with chicken. Let sit in the fridge for as long as you can (24 is best but 2-4 is ok). Heat oil and fry the garlic. Don’t fry for to long (light brown a little colored). Drain on paper towel. Strain liquid from chicken and dry. Roll chicken in tapioca starch, shake off and fry in oil till golden. In a pan add 1/8-1/4 cup of sugar fish sauce, once it starts to boil and caramelize add wings. Cook until wings caramelize and sauce becomes sticky. Add in fried garlic and toss. Enjoy!
